Banana Bread in the form of a pancake – what could be better? These vegan and gluten-free pancakes are made with oat flour and bananas and topped with chocolate chips and walnuts. Yum! Yum!

I’ve craving pancakes lately and I wanted to share some of my favorite pancake recipes. However, I realize these days (in the middle of a pandemic), it can be difficult (or expensive!) to find flour. I made a video with 3 of my favorite pancake recipes that you can watch by clicking the link below. They all use different types of flours, and are very adaptable, so you can use what you have available.
These Banana Bread Pancakes do not require any flour, just some oats! And if you are gluten-free, I am sure you have some gluten-free oats around the house.
They also require just one very ripe banana. When I made the video, I didn’t have any fresh bananas on hand, so I used a frozen one. Just make sure you thaw it out before using! You will need to mash, and it’s kind of hard to mash a frozen banana!

As for the toppings on these Banana Bread Pancakes, you can use pretty much anything you want. I like to top my banana bread with walnuts and chocolate chips, but you could also use pecans, almonds, berries, granola, yogurt, jam, peanut butter…go nuts!

You could even replace the maple syrup with agave, honey (if you’re not vegan), or a sprinkle of sugar. But really, maple syrup is the best if you have it!

Banana Bread Pancakes | Vegan, Gluten Free
These delicious and healthy pancakes are made with oat flour and have all the delicious flavors of banana bread!
Ingredients
- 1 cup rolled oats or oat flour
- 1 Tbsp. ground flax
- 3 Tbsp. water
- 1/4 cup plant based milk
- 1 tsp. apple cider vinegar or lemon juice optional
- 1 very ripe banana mashed
- 1 Tbsp. oil or melted vegan butter
- 1 Tbsp. maple syrup or sugar
- 1 Tbsp baking powder
- â…› tsp. salt
- 1 tsp vanilla extract
Instructions

Make a flax egg by combining 1 Tbsp. or ground flax seed with 3 Tbsp. of water. Set aside to gel while you mix the rest of the ingredients.

Combine the apple cider vinegar or lemon juice with the milk if desired. This step is optional, but it will make your pancakes fluffier. Set aside for a few minutes.

Make the oat flour by pulsing the rolled oats in a food processor, grinder, or blender. It does not have to be super fine.

Combine all the dry ingredients – flour, baking powder and salt in a mixing bowl.
In another bowl, combine the wet ingredients – milk, flax egg, oil, vanilla, and maple syrup.
Gradually add the dry ingredients to the wet and stir to combine. Do not overmix. It is okay if it is a little lumpy.

Melt some vegan butter or oil on a hot skillet. Pour 1/4 cup of batter onto the skillet to brown on the bottom side. This takes about 3 minutes. While it is cooking press in some chocolate chips and chopped walnuts (or nuts of your choice).
Flip the pancake and brown on the other side, again for about 3 minutes.
Repeat. You can fit as many as 3-4 pancakes on the skillet at once to save time.
Stack the pancakes and douse with maple syrup, more chocolate chips and nuts, or your toppings of choice.
