I swear I ate these Vegan Black Bean Quesadillas every day for at least a week! They’re so quick and yummy, and seriously make you feel good all over!

Quesadillas are ideal any time of day!

Quesadillas have been a favorite of mine since I was a kid and I typically eat them for breakfast. But vegan quesadillas are ideal for any meal of the day – breakfast, lunch, dinner, or snacktime!

The basic quesadillas I grew up eating were just 2 ingredients – tortillas and cheese. But over the years I have tried to incorporate more veggies, particularly greens, into my breakfasts. I found that kale is the ideal veggie for adding to a vegan quesadilla because it’s easy to cook up really quickly and of course, kale is amazingly nutritious!

Tasty Vegan Breakfast Quesadillas

Spice it up!

I like to kick up the flavor of these vegan quesadillas with some homemade taco seasoning. Of course, you can always buy taco seasoning from the store, but I love to make a big batch and then i have it on hand to flavor all kinds of dishes!

Here’s what goes in it:

4 tbsp chili powder

2 tbsp cumin

1 tbsp paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp dried oregano

½ tsp cayenne powder

½ tsp coarse salt

Seasoning for Maximum YUM!

Just sprinkle this seasoning on the kale or straight into the beans or both!

I like to steam the kale in a pan with a little water and toss it in some of the seasoning.

Whether you are heating your beans on the stove or the microwave, or cooking them from scratch, stir in some of this seasoning for an authentic Mexican flavor!

Vegan Quesadillas means Vegan Cheese

You can’t have a quesadilla without cheese! But if you are vegan, you’ll want to replace regular cheese with a vegan variety. There are so many different kinds on the market these days, you can pick your favorite. But personally, I really enjoy Daiya Pepper Jack Shreds for this quesadilla. It melts well and has just a little kick to it! A cheddar style would also work really well if you’re not into spice.

Yes, I like it spicy! I even add some green chili sauce to mine, but you can always do the spice level you are comfortable with!

Assembling your Quesadillas

You will need:

  • Tortillas (I like to use whole wheat)
  • Vegan cheese
  • Black beans (whole or refried)
  • Fresh kale, cut into small pieces
  • Taco seasoning or just salt and pepper if you prefer
  • Hot sauce or chunky salsa (optional but highly recommended!)
  • Avocado slices (also optional)

I like to start by steaming the kale in a skillet. Just add the shredded kale to a pan with a little water. Add the taco seasoning or whatever seasonings you are using (salt and pepper works fine too!) and let it cook down for about 5 minutes. Set aside while you heat up your tortilla.

Place your tortilla on a hot skillet and sprinkle it with the vegan cheese on one half of the tortilla. Add some beans to the same side and fold the tortilla in half. Heat on the skillet, flipping it over until browned on both sides and the cheese is melted.

Open up the quesadilla and add the kale and hot sauce (if using). Cut in half (or not) and enjoy!
