Delicious Vegan Recipes

All of the recipes I share are vegetarian, most are vegan, and many are gluten-free. All of them are healthy and delicious and perfect for feeding a hungry family or just yourself!

I have been vegetarian for over 30 years and was vegan in my 20s. Two years ago I transitioned back to a totally plant-based vegan diet. I did this partly for health reasons and partly for environmental reasons. But the biggest reason of all was because I found out about how cruelly animals are treated in the dairy industry. I just couldn’t continue to be a part of a system that does such harm to animals and the environment.

When I started this blog, I was still using dairy products, so a few of the recipes still contain dairy. But those that do can easily be made without it, and in most cases, I have provided the vegan alternative. Many of my recipes are time-tested and kid approved (I am also a mother of two boys), so you know they are good – and easy to make!

I am also on a weight loss journey, so many of my recipes are perfect for losing pounds and inches by adding more plant-based foods to your diet, without feeling deprived of all the foods you know and love.

Sustainable Living

Ever since my early 20s, I have looked for ways to live a lifestyle that has minimal impact on our planet and our environment, with maximum benefit for my health, body, and soul.

I am sure you have heard the expression “Reduce, Re-use, Recycle (and Respect)”? That’s my mantra! I am always looking for ways to Reduce waste, Re-use what I can, and Recycle what I can’t use anymore. I also Respect my environment, the planet, and all of those around me. I will share my tips and tricks for practicing the 4 R’s.

I also love gardening, spending time outdoors with my family, and living a healthy life that nurtures my body and spirit. I will show you ways that you can enjoy this kind of life too!

Archaeology and Going Back to College

 In addition to cooking up delicious vegan recipes, I make my living as a professional archaeologist. I haven’t been doing this for a long time, but it is a career I truly love.

I have a real passion for archaeology and I will share all my archaeological adventures and tidbits with you! If you are interested in becoming an archaeologist, I will share what it is really like, and how you can best succeed in the field.

I started a B.A. degree program at the University of Colorado, Colorado Springs when I was 40 years old. I then went on to get my M.A. degree from the University of Colorado, Denver, and graduated in 2017. 

So I know a thing or two about going back to college at an “non-traditional” age, and how to get scholarships, grants, work-study and intern positions, and more!

I did it all while raising two boys as a single mom!

Although these types of articles won’t be a significant part of my blog, I still want to offer any help that I can to anyone who wants to go to college at any age! If you are one of those people, please check out the articles I do have, and let me know what you need help with!
