Dig into some Banana Bread Pancakes

Banana Bread Pancakes | Vegan, Gluten Free

These delicious and healthy pancakes are made with oat flour and have all the delicious flavors of banana bread!

  • 1 cup rolled oats or oat flour
  • 1 Tbsp. ground flax
  • 3 Tbsp. water
  • 1/4 cup plant based milk
  • 1 tsp. apple cider vinegar or lemon juice optional
  • 1 very ripe banana mashed
  • 1 Tbsp. oil or melted vegan butter
  • 1 Tbsp. maple syrup or sugar
  • 1 Tbsp baking powder
  • tsp. salt
  • 1 tsp vanilla extract


  1. Make a flax egg by combining 1 Tbsp. or ground flax seed with 3 Tbsp. of water. Set aside to gel while you mix the rest of the ingredients.

  2. Combine the apple cider vinegar or lemon juice with the milk if desired. This step is optional, but it will make your pancakes fluffier. Set aside for a few minutes.

  3. Make the oat flour by pulsing the rolled oats in a food processor, grinder, or blender. It does not have to be super fine.

  4. Combine all the dry ingredients - flour, baking powder and salt in a mixing bowl.

    In another bowl, combine the wet ingredients - milk, flax egg, oil, vanilla, and maple syrup.

    Gradually add the dry ingredients to the wet and stir to combine. Do not overmix. It is okay if it is a little lumpy.

  5. Melt some vegan butter or oil on a hot skillet. Pour 1/4 cup of batter onto the skillet to brown on the bottom side. This takes about 3 minutes. While it is cooking press in some chocolate chips and chopped walnuts (or nuts of your choice).

    Flip the pancake and brown on the other side, again for about 3 minutes.

    Repeat. You can fit as many as 3-4 pancakes on the skillet at once to save time.

    Stack the pancakes and douse with maple syrup, more chocolate chips and nuts, or your toppings of choice.
