  • 1 Tofurky roast thawed for 24 hours

  • 3/4 cup orange juice
  • 3 Tbsp. Tamari or soy sauce
  • 3 Tbsp. olive oil
  • 1 Tbsp. dried sage
  • 1/4 tsp. black pepper

Veggies (optional)

  • 3-5 large garlic cloves
  • 3 large potatoes cut into 1" pieces
  • 2 stalks celery
  • 2 medium carrots
  • 1 medium onion chopped

  1. After thawing the Tofurky for at least 12 hours, remove the plastic wrap and place the roast in a clay baking dish or Pyrex dish with a lid. If you don't have either of these, place in a baking dish with foil to cover.

  2. Preheat the oven to 375 F.

  3. Place all the marinade ingredients in a bowl or large measuring cup and stir together.

  4. Chop all the veggies and add them to the baking dish with the Tofurky.

Pour half of the marinade over the Tofurky and the veggies.

  5. Cover with the lid and put in the preheated oven.

Cook for 50 minutes. After 50 minutes, turn the Tofurkey over with some tongs and pour the rest of the marinade over the roast and the veggies.

    Cook for another 30 minutes.

  6. Your Tofurky is ready! Slice into pieces about 3/4" - 1" thick and serve with the veggies and some vegan gravy.
