Ingredients

  • 4 cups tart apples
  • 1/2 cup coconut sugar or brown sugar
  • 3/4 cup rolled oats
  • 1/4 cup gluten-free or all purpose flour
  • 1/2 cup chopped pecans
  • 1/3 cup coconut oil or vegan butter
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger

Instructions

  1. Slice your apples into thin wedges or small cubes and place into a greased square baking dish.

  2. In a food processor, add all of the dry ingredients except the nuts, including the coconut oil or vegan butter and pulse until you have a crumbly texture.

    If you don't have a food processor, you can mix it with a fork.

  3. Spread the topping over the apples to coat evenly.

    Chop the pecans (or use pre-chopped ones) and spread evenly over the top.

  4. Bake in the oven at 375 F for 30-35 minutes.

    Serve warm with some plant-based yogurt, ice cream, or whipped topping.
